Sweet Bacon Wrapped Pork Loin
1 (3 pound) boneless pork loin
8 slices of bacon
6 tablespoons honey
6 tablespoons balsamic vinegar
6 tablespoons dry red wine
2 tablespoons xx virgin oil
1 sweet onion minced
1 tablespoon chopped fresh rosemary
2 tablespoon golden raisins
Pre-heat oven to 375 degrees, line a shallow roasting pan with aluminum foil
Season pork loin with salt and pepper wrap the bacon slices around the pork
Loin and secure with toothpicks pre-heat a large skillet over medium high heat
Then add the pork loin cook until golden brown on all sides then place on the roasting
Pan stir together honey balsamic vinegar and rosemary in a small bowl and spread over
the pork roast the pork loin in preheated oven for 15 minutes then sprinkle with raisins continue cooking until the internal temperature of the pork reaches 160 degrees for 15 more minutes
Remove from oven and allow resting for 5 minutes before removing toothpicks and slicing.
Asparagus with Béarnaise Sauce
2 bunches fresh asparagus (40 stalks)
1/2 cup plain low-fat yogurt
6 tablespoons fat-free whipped salad dressing spread
4 teaspoons chopped tarragon
1 tablespoon lemon juice
1/4 cup vegetable broth
2 tablespoon Dijon mustard
Steam asparagus until tender crisp 6-10 minutes meanwhile mix yogurt, salad dressing, tarragon, lemon juice, broth and mustard in sauce pan heat (do not boil) mixture on medium heat for 5 minutes or until warm drizzle sauce over steamed asparagus.
Garlic Mashed Potatoes
7 cups peeled and cubed baking potatoes
6 cloves garlic peeled
1/2 cup low-fat milk
1/4 cup parmesan cheese grated
2 tablespoons butter
1/2 tablespoon salt
1/8 tablespoon pepper
Place potatoes and garlic in a saucepan cover with water bring to a boil reduce heat and simmer for 20 minutes then drain, place drained potatoes and garlic in a mixing bowl add remaining ingredients then beat with mixer until smooth.
